Carne Asada

(spicy, marinated grilled steak, cut into strips)

Use 2-3 lbs. skirt or flank steak.

We have found this to be a fantastic all-around beef marinade here at RLCB. Use the recipe as follows, or get creative with tacos, fajitas and stir fry.


 

Ingredients

 
  • 3 TBSP Lime Juice

  • 2 tsp chili powder

  • ½ cup fresh cilantro, chopped

  • Salt and pepper to taste

  • 2 kiwis, peeled and mashed

  • 2 - 3 pounds skirt or flank steak

  • ¼ cup soy sauce, (coconut aminos for gf option) 

  • 3 TBSP olive oil

  • 2 tsp ground cumin

  • 2 tsp onion powder


 

Instructions

 

Marinade

  1. In a 1-gallon zip lock bag, add the soy sauce, olive oil, garlic, lime juice, cumin, onion powder, cilantro and chili powder.

  2. Add the steak to the bag and squish the contents to ensure that all of the meat is covered with the marinade.

  3. Chill for a minimum of 3 hours or overnight.

  4. Remove the marinated beef from the fridge and place on a plate or baking dish.  Evenly press the mashed kiwi over all sides of the steak. Chill for another 30 minutes.

Cooking

  1. Cook the marinated steak on the grill until both sides are browned. Approximately 7 to 10 minutes per side. The cook time will vary depending on the thickness of the steaks.

  2. Transfer the steaks to a cutting board and let rest for about 5 minutes. Slice the meat into thin strips against the grain.

  3. Serve the meat over rice, with tortilla chips or in a taco or burrito. Another option is to top with avocado slices.
