BBQ SHISH KABOBS
For stew meat or round steak
Prep Time: 20 minutes | Cook Time: 9 - 12 minutes
Serve with rice or quinoa
Ingredients
- 2 bell peppers 
- 2 zucchini 
- 10 small mushrooms 
- 1 - 2lbs stew beef or tenderized round steak 
- 10 - 15 metal skewers 
- 1 large onion 
- olive oil (for drizzling & cooking) 
For the Marinade:
- 2 TBSP worcestershire sauce 
- 2 TBSP balsamic vinegar 
- salt and pepper to taste 
- 2 garlic cloves 
- 1 TSP onion powder 
- 3 TBSP soy sauce 
Instructions
- Prepare the marinade in a bowl or plastic bag 
- Chop beef into 1 inch pieces and marinade for at least 30 minutes 
- Chop vegetables into 2 inch pieces 
- Saving the marinade, assemble skewers with beef and vegetables, leaving a few inches of space on either end. Pour the remaining marinade over the skewers. 
- Barbecue the skewers over high heat, 3-6 minutes per side. 
- Let rest for 5 minutes after cooking 
- Serve with a side of rice or quinoa
